Potato Cakes are a southern way to use leftovers, namely mashed potatoes.  So, if you have a bowl of mashed potatoes and you don’t want to throw them out, this is an easy way to make a tasty snack or even a side dish for a meal.  The best thing about these is, that they are adaptable.  You can add onions or not, you can add cheese, or many other things you can dream up.  I really enjoyed this, and I hope you do too.
